Easy Bars
February 16th, 2008 by HeidiKnow why they are called easy bars? Because it’s SO EASY to eat the entire pan.
Spray a 9×13 pan. Crush one package of graham crackers in a blender (can do 1.5 packages but I only had one and it worked), pour into pan and pour over melted butter (I did 3 T but other recipes call for more) and mix it around and then press it down. Pour over chocolate chips until you feel like you should stop or you run out of room. Sprinkle coconut over until it looks good. Pour over sweetened condensed milk (you can add nuts before the milk, if you want.) If you buy it use about a can, but we make ours and use maybe half a cup? Maybe a cup? I didn’t measure.
Sweetened condensed milk
blend 1 cup HOT water, 2 c powdered milk, just under 2 cups sugar (I did 1 3/4 but it’s flexible) and 6T melted butter - store in fridge, makes about 2 cans and is MUCH CHEAPER!
Bake bar cookies until golden brown on edges and coconut looks bit toasty, around 325 degrees. Cool bit, run knife around edge so it doesn’t stick. Cut into bars and eat, or just wait until the kids are in bed and grab a fork.
None of the kids like coconut lately so these are calories just for me & Mojo (and Kit, if he gets to them before I finish the pan.)
Third pint of Ben & Jerry’s done (cinnamon bun) so 3/4 of the way to one of my new year’s goal. Not sure which flavor to try next, craving something minty maybe? Or fruity?
